But I ended up getting distracted by this plaid wool mini-skirt with the original tags still attached. Well, life has been crazy lately, as I'm sure you could imagine what with the complete radio silence here on the blog. I do have a feeling that things are about to slow down a bit. I've recently felt a shift, a coming up for air, and a strong desire to focus inward and find some calm. </div>

I've been mending quilts, pickling and preserving the last of the CSA veggies, and drinking too much coffee, tea, and chai for my own good.</div>

This will definitely be a year for pie, since I have finally perfected homemade pie crust! Homemade pie crust used to scare me. I had heard how hard it was to get right, so I always defaulted to a roll and bake Pillsbury crust, but once I learned a few tricks I discovered that pie crust is really easy to make. You just need a food processor, a freezer, and a bit of patience. </div>

J. has actually gone on record to say that this pie crust recipe has changed his opinion on pie entirely. He used to HATE pie of all kinds, but now he can't get enough. This crust is so flaky and buttery he'd be insane not to love it! </div>

<span style="text-align: left;">Perfect Pie Crust</span></h2>

<span style="font-size: small;">Prep time: ~ 15 minutes active, 12-24 hours inactive Difficulty: Medium </span></h2>
<span style="font-size: small;">1 1/2 cup all purpose flour</span><br />
<span style="font-size: small;">1 stick butter- FROZEN</span><br />
<span style="font-size: small;">pinch of salt</span><br />
<span style="font-size: small;">8-10 oz ice water</span><br />
<span style="font-size: small;"><br /></span>
<span style="font-size: small;">1. Gather all of your ingredients. Lay out a large sheet of plastic wrap on a nearby surface. Fill an 8-10 oz jar with as many ice cubes as you can. Top the glass off with the coldest water you can get and set it aside. (The key to great crust is temperature. You want everything to be super cold!) </span><br />
<span style="font-size: small;"><br /></span>
<span style="font-size: small;">2. Level out you flour directly into the food processor with the blade attachment. Sprinkle the flour with salt.</span><br />
<span style="font-size: small;"><br /></span>
<span style="font-size: small;">3. Cut the stick of FROZEN butter in half. Roughly chop the sticks into pieces using the tablespoon marks on the wrapper as a guide. Drop butter cubes on top of the flour and pulse a few times until the butter breaks up, creating a grainy texture in the flour. </span><br />
<span style="font-size: small;"><br /></span>
<span style="font-size: small;">4. With the food processor on low, slowly pour the icy water into the mix watching the flour very carefully </span>(you don't want to drop in whole ice cubes). Add water and mix JUST until the flour pulls away from the sides of the processor and starts to come together. The mixture will be a buttery yellow and look like little beads (almost like those Dippin' Dots ice cream beads they sell at amusement parks.)<br />
<span style="font-size: small;"><br /></span>
<span style="font-size: small;">5. Gently turn the entire mixture out onto the plastic wrap. DO NOT knead the dough or manipulate it. Simply wrap the dough up, pushing it together into a flat disk as best you can as you wrap it. Place the disk in the fridge and leave it alone! (The more you work your dough the tougher it will get so try to do as little with it as you can.)</span><br />
<span style="font-size: small;"><br /></span>
<span style="font-size: small;">6. Chill the dough for at least two hours. I find that the longer the dough sits, the better the results. In fact, I try to make my dough the day before I plan to use it. </span><br />
<span style="font-size: small;"><br /></span>
<span style="font-size: small;">7. When you're ready to make your pie, prep all of your filling ingredients before taking the dough out of the fridge. You want to flour your surface and roll your dough right out of the fridge so that the butter forms flat sheets within the crust. Those sheets of cold butter trapped in glutenous crust is what makes for a super flaky crust. </span><br />

<span style="font-size: small;">8. Follow your normal pie procedure, carefully checking the edges of the crust as your pie bakes. If they're getting too dark wrap a bit of foil around the edges to finish up. </span><br />

This wildly printed bodycon dress was an iffy purchase for me. In fact, I almost skipped it entirely, but now that I've had a chance to play with it some more I am so glad that I took the plunge. It works great as a top and as a skirt, for work. It also looks great with some boots and a military jacket for an outdoor concert. I'm still pondering remix options for it, and I have a feeling it will quickly become a favorite.</div>

Over the years I have felt a style evolution happening. I used to rely entirely on a closet full of bright, printed, trendy items picked up on the cheap from clearance racks. But as I have grown into my style I have found a lot of comfort in simple, basic items, like a great denim jacket, or some cropped black trousers, and great accessories. </div>

Last week was a little bit schizophrenic. I was all over the place, and the weather was right there along with me. This little black jersey dress is a summer staple for me, but I wanted to try to make it a bit more transitional by styling it up for fall. Luckily, the simple, neutral piece makes an easy companion for a cute, autumnal scarf and some booties.</div>

Last week, I'd been feeling a little bit out of sorts. I came in one day and saw a co-worker in the parking lot. We both sighed at one another and shared a moment of exhaustion. This year is hitting hard? Why can't we get back into it?</div>

The transition back into the swing of things has been pretty rough this year, but I'm starting to see the light at the end of the tunnel. Things are cooling down (both literally and figuratively) and this week I started to pull out some scarves, and get out into the late afternoon glow to snap some pictures. I definitely sense a rhythm coming back, which mean more outfit posts and more sanity on the horizon! </div>

This week we've had a bit of kitchen craziness, resulting in my first ever call for a plumber (oh, the joys of home ownership), so creating and documenting a weekly recipe got put on hold. </div>

But, instead of just skipping a weekly share post I figured it was a great time to share one of my favorite resources for recipe inspiration and give you some links to two of the recipes I played with this week. I follow a lot of different blogs, but by far one of my favorite daily reads is <a href="http://www.abeautifulmess.com/" target="_blank">A Beautiful Mess</a>. This blog has it all: great style, tons of DIYs, lots of sister love, and photography tips, but my favorite part of the blog is all of the wonderful recipes Emma brings to the table. Everything this girl makes is creative, looks amazingly yummy, and relies on simple ingredients and techniques. I've made countless recipes from this website, and modified even more to suit our tastes. This summer Emma's also been playing with CSA veggies, so we're pretty much on the same page. This page is my first go-to when searching for inspiration.</div>

This week I tried the <a href="http://www.abeautifulmess.com/2014/07/creamy-beet-linguine.html" target="_blank">Creamy Beet Linguine</a>, which was both delicious and beautiful. I can't wait to make this dish again. Next time I'll be substituting goat cheese for the ricotta to mimic one of my favorite flatbreads at a local cafe.</div>

I also made a variation of the <a href="http://www.abeautifulmess.com/2014/06/eggplant-parmesan-subs.html" target="_blank">Crispy Eggplant Parmesan</a> balls last night, shaping them into flat fritters. We had a ton of eggplant, and a bottle of leftover falafel mix, so seeing a recipe that used both eggplant and chickpeas made a ton of sense. I served the fritters over a simple green salad for dinner, and have been munching on the leftovers all day.</div>

School starts up next week, and I have been feeling both restless and cozy all week long. I'm hoping to get a few recipes shot this week so I can line up a few posts for the upcoming weeks, so be on the lookout. Every week when I pick up our CSA I start to instantly get excited about the recipes I'll make for the week. It helps that our CSA also offers membership to a really great meal planning website that helps me know what the heck to do with some veggies I've never seen before (ummm, hello, 4 weeks worth of kohlrabi). But even with all of that planning and excitement, we still end up with some leftover veggies that didn't make it into the fancy dishes at the end of each week. </div>

That's where frittatas have been my savior this summer. I find myself making one every week, usually on the eve of our next share pickup, and tossing in whatever veggies we have left. 1. Preheat oven to 400 degrees. Put butter in a 9" round baking dish or pie pan and place in the oven. The butter will melt as the oven heats.</div>

2. Shred potatoes into a medium bowl. Season with salt, pepper, paprika, and garlic. Add one egg and stir thoroughly. Remove the dish from the oven, swirl melted butter to coat the bottom and sides of the pan. Press potato mixture firmly down in the pan, pushing the potatoes up a bit on the walls of the pan. </div>

Bake for 25 minutes until edges become brown and crispy. Remove from oven. Top with about 1/2 the cheese and set aside.</div>

3. While the potatoes are baking, crack the remaining eggs into the bowl. Season with salt, pepper, paprika, and garlic. Add cottage cheese and chopped veggies, and whisk until light and fluffy. Set aside.</div>

7. Bake at 400 degrees for 15 minutes. After 15 minutes drop heat to 300 degrees and cook for an additional half hour or until center in completely set. Let frittata rest for 10-15 minutes before serving. Serve warm!<br />

Unfortunately, J doesn't love the green fruit, so I've had to find creative ways to use up our stash. Luckily, zucchini bread is a favorite in our house. We also had an abundance of carrots, so I decided to play with those as well in these recipes. </div>

This week I decided to start playing with savory zucchini bread as well after seeing <a href="http://norecipes.com/recipe/zucchini-bread-recipe/" target="_blank">this recipe</a>. They're very different but both are super delicious. I suggest making both at the same time, serving the savory zucchini carrot cheddar muffins with dinner and saving the zucchini chocolate carrot bread for dessert! </div>

<b>Prep Time: 20 minutes Cook Time: ~20 minutes Difficulty: Easy-Medium</b><br>
<b>Yield: 12 muffins or one loaf</b><br>

1 medium zucchini<br>
2 medium carrots<br>
1/2 cup sharp cheddar cheese<br>
1 cup all purpose flour<br>
1/2 cup whole wheat flour<br>
1 Tbs sugar<br>
1 1/2 tsp baking powder<br>
1 tsp paprika<br>
1 tsp salt<br>
3 large eggs<br>
1/3 cup olive oil<br>
2 Tbs water<br>

1. Preheat oven to 350 degrees F. Line muffin tray with muffin liners or line loaf pan with parchment paper. (If you would rather you can grease and flour the pans, but liners make for much easier clean up!)<br>

2. Remove the end of the zucchini and carrots. Using a box grater, or a food processor, shred the two together. Feel free to leave the skins on both veggies. Set aside for later.<br>

3. In a large bowl whisk together the dry ingredients (flours, sugar, spices, baking powder). Set aside.<br>

4. In a smaller bowl, beat the eggs until they are frothy and lemon colored. Add the zucchini, carrots, and shredded cheese to the flour mixture and mix until just combined. Be gentle here, over-mixing will make your muffins tough.</div>

5. Fill muffins 3/4 full and bake for 15-20 minutes or until a toothpick comes out clean when you poke the center of a muffin. (If making a loaf, bake for at least 40 minutes, using the toothpick test for doneness.)<br>

1 medium zucchini<br>

1.5 cups brown sugar <i>packed</i><br>

3 tsp cinnamon<br>
1/2 tsp nutmeg<br>
1 tsp salt<br>
1 tsp baking soda<br>
1/2 tsp baking powder<br>
2 cups all purpose flour<br>

1/2 bag semi-sweet chocolate chips<br>

1. Preheat the over to 350. Line each loaf pan with parchment, or line the muffin pans with muffin tins.<br>

2. In a large bowl, beat eggs until frothy and lemon colored. Whisk in sugar and vanilla. Slowly add the melted butter, whisking as you drizzle it in. (Be careful not to add the hot butter all at once so you don't scramble the eggs!)<br>

4. In a medium bowl combine the dry ingredients. Whisk together, then add to the wet ingredients, mixing until just combined. Add the chocolate chips and stir together gently.<br>

After finishing teaching my summer class, I entitled myself to a full week without any self-imposed work regulations, and let myself just have a stay at home week to catch up and recharge. I spent every day last week lying in bed reading till close to noon, taking bike rides, and cooking up a storm. I've been really into pickling and preserving things this summer. Between our amazing CSA and my weekly harvest from the school garden where I volunteer, it really is the only way to get the most out of all of our veggies. </div>

Last week was the first real week for tomatoes. I picked a big basket of various cherry varieties and then got some bigger tomatoes at the CSA pickup. We're not the biggest tomato fans in my house, but we love all Mexican style foods, so salsa is a necessity for us. This peach salsa is one of my husband's favorites. I used to always make it incredibly mild, but recently I've developed more of a taste for heat, so I decided to play with this recipe by adding some smokey dried chipotle. It turned out really tasty!</div>

Chop or robo the scallions, garlic, and cilantro. I like for these ingredients to be fairly fine in my salsa, but if you like yours chunky, just give them a good chop and toss them in to a medium sized mixing bowl.</div>

Next, take on the peppers. I used a few baby bell peppers and a dried chipotle, though jalapenos or habaneros would work if you really like bright, fresh heat. Regardless of what peppers you decide to use, remove the inner ribs and seeds before chopping them to your desired chunkiness.</div>

Add the juice of two limes, a generous drizzle of honey, salt, pepper, and cumin to taste. If you want a little more heat, add a few drops of hot sauce. Remember to taste your salsa with chips so that it doesn't get too salty.</div>

At our end of the year barbecue, one of my coworkers brought a wonderful raw, chopped salad that he called a "detox salad". I had never heard of it before, but a quick search led me to <a href="http://ohsheglows.com/2011/09/27/detox-salad/" target="_blank">this recipe </a>from Oh She Glows, which gave me just enough guidance to riff off of. It seems the original is a riff off of a Whole Foods recipe, so I felt pretty empowered to take liberties and use the veggies from our CSA share. This week, we had another abundantly green basket coming from our CSA. Our share was filled with greens and herbs along with radishes, fennel, garlic scapes, a cabbage, and another kohlrabi. </div>

Since we had back to back 4th of July barbecues to go to I wanted to find a good dish to pass option. When The Pioneer Woman posted<a href="http://thepioneerwoman.com/cooking/2014/07/kale-pasta-salad/?utm_source=feedburner&utm_medium=feed&utm_campaign=Feed%253A+pwcooks+%2528The+Pioneer+Woman+Cooks%2521%2529" target="_blank"> this recipe</a> for a kale filled pasta salad I had the inspiration I needed for creating my own. Since I had two varieties of kale as some rainbow chard, I used a variety of greens, but this recipe would be great with just about any dark, leafy green. </div>

In a large pan heat a good amount of olive oil at medium-high heat. Season generously with salt and pepper, and let simmer gently for 5-7 minutes. The garlic and fennel will soften, infusing the oil with garlicky goodness.</div>

Add the garlic, fennel, and oil to the pasta. Gently squeeze the juice of half a lemon over the pasta and add half of the Romano cheese. Stir it up. </div>

Toss the washed, de-stemmed, and chopped greens into the same pan that you cooked the garlic in at medium-high heat. Add a generous pat of butter. Season the greens generously with salt and pepper and sautee the them gently. As the greens start to wilt, add a bit of water (a few tablespoons will do) to create some steam. Cover the greens for a few minutes until they are cooked down and wilted. Hit those greens up with the second lemon half before tossing them with the pasta and remaining cheese. </div>

For the past few years, J and I have been helping out with a community garden at my school. We work a weekly shift of weeding, watering and completing other garden tasks with middle school students who volunteer their time to help out as well. This practice has kept us well fed and happy for multiple summers.</div>

This year, we decided to invest in a produce CSA (we've been doing a meat CSA for over a year) as well. For those who don't already know about CSAs, they stand for Community Supported Agriculture. The way our share works is we paid up front for a weekly pick up of vegetables from a <a href="http://www.ithacaorganics.com/" target="_blank">local organic farm</a> owned by one of my coworkers. With some CSAs, the farmers pack a box of varied produce for their customers. We chose the option where we go directly to the farm and get to choose our veggies for the week. I love having the opportunity to not only indulge in healthy food, but to also support our local friends and community.</div>

Since we're going to be up to our ears in veggies this summer, many of which I will have never used before I was thinking that this would be the perfect time to start a new feature here.
